Yoga – Sivananda Cookie Recipe

Sivananda Cookie Recipe:

2 cups oats
1 cup plain whole-wheat flour
1/2 cup raisins
1/2 cup unsalted peanuts
1 cup brown sugar
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1 1/2 teaspoons ground ginger
1/2 teaspoon baking powder
pinch salt
3/4 cup sunflower oil
1 cup milk or water

Preheat the oven to 400 degrees F. Mix the dry ingredients in a large bowl;
add the oil and mix well.  Stir in enough milk or water to make a firm mixture.
Place heaped spoonfuls on an oiled baking tray, and flatten them into 4 in.
rounds. Bake for 12-15 minutes until golden at the edges.  Cool on a rack.
I use walnuts instead of peanuts and usually bake them about 20 minutes.
Makes 12 large cookies.

Or make them into nickle sized and get a bit more!
